Betty's New Collar

My mom bought Betty a new collar for Christmas. Since it's Summer, I figured it was time for Betty to wear and show her summer colors. Doesn't she look cute!! She was sleeping when I took the picture and I accidentally woke her up.

Salsa Chicken

Well, it was a clean out the fridge night. Here's a quick to put together recipe with some stuff I found in the fridge and pantry:

Salsa Chicken
Ingredients (Since it's leftover stuff there's no exact measurements):
  1. Chicken Breasts (I had one package with 3 large chicken breasts in it)
  2. Salsa (I had 2/3 of a 16oz jar leftover so probably a little over a cup)
  3. Crushed Tortilla Chips (bottom of the bag crumbs, around a cup)
  4. Shredded Cheddar Cheese (also about a cup)
Preheat oven to 375F. In a baking dish add a little salsa to coat the bottom. Place chicken breast on top. Top with the rest of the salsa. Bake 20-30 minutes depending on thickness of chicken. Then top with crushed tortilla chips and cheese. Bake for another 5-10 or until cheese is melted. Enjoy!

More Knitting Progress

Well, I'm moving along with the Soleil tank, I'm working on the upper back and after that I just have the two front parts to do. I'll be so happy when this is done. In other news, I was working on a Log Cabin Dog Bed for the hounds but I wasn't happy with how it was turning out. I hated the yarn. So, I scrapped that and will eventually start it again when I find yarn more suitable for the project.
I'm now thinking of the next project to make. I'll probably start on the cable jacket so it'll be ready when the cooler weather starts. It takes so long just to knit something. But I might make some smaller items to take a break from a big knitted garment.
